Use fresh filtered water and grind immediately before brewing. This roast is more forgiving at lower temperatures; if the cup becomes ashy or drying, lower heat or shorten contact before making the brew weaker. Each method label lists dose, water, and temperature. If sour or hollow, grind finer; if bitter or drying, grind coarser or cooler. Change one variable at a time.

Your definitely getting the bottom end of 'specialty' beans, but it is expected that this price. For me, I am pleased overall and would keep the subtle tradeoff in mind. Overall the medium dark roast suited me.
