Grown in the high-altitude Gedeo zone of southern Ethiopia, Ethiopian Yirgachefe coffee is celebrated for its floral, citrusy notes and clean, vibrant acidity. This USDA organic coffee is sourced from traditional Arabica varieties, cultivated for generations in the birthplace of coffee. As part of the Yirgachefe Coffee Farmers’ Cooperative Union (YCFCU), over 45,000 smallholder farmers uphold the region’s legacy of sustainable, high-quality coffee production. With its Strictly High Grown (SHG) status and nutrient-rich soil, Yirgachefe coffee delivers a unique, fruit-forward profile that continues to be revered worldwide. Interesting Fact: Crematix opts for the spelling "Yirgachefe" to honor the original Ethiopian transliteration, which omits the second "f." This choice aligns with their use of "Gesha" and "Sidama," reflecting the native spellings and demonstrating respect for the coffee's cultural origins. It's important to note that all these spellings refer to the same region in Ethiopia, known for producing exceptional coffee beans. The choice of spelling is often a matter of brand preference.
A medium-light washed Yirgachefe with blueberry, lemon, and blackberry. Favor clean paper filtration and even extraction for vivid fruit without sharpness.
Use fresh filtered water and grind immediately before brewing. This washed coffee is at its best when blueberry sweetness supports the lemon note; if lemon reads as sour, extract more before making the brew stronger. Each method label lists dose, water, and temperature. If sour or hollow, grind finer; if bitter or drying, grind coarser or cooler. Change one variable at a time.
