There’s no single best espresso bean. Look for these four things to find one that suits your cup.

Rich & roasty, or light & bright?
A medium or darker roast is a familiar starting point for a rich shot. Lighter roasts can bring brighter, fruitier flavors.
Check the roast date
Freshly roasted coffee releases gas. Give it time to settle before brewing espresso, following your roaster’s advice. Store it airtight, away from heat.
Whole beans. A fine, even grind.
Grind just before brewing with an espresso-capable burr grinder. Small adjustments help you control the flow and bring the flavors into balance.

At your espresso machine
A starting recipe, with room to adjust. Use espresso-fine coffee and a basket suited to an 18 g dose.

18 g in → 40 g in the cup.
Weigh the espresso, then taste and adjust.
Preheat the machine and portafilter, then flush the group briefly before drying the basket.
Dose 18 g, distribute the grounds evenly, and tamp level with consistent pressure.
Start the shot and stop near 40 g. If it runs fast, grind finer; if it runs slowly, grind coarser.
Try a slightly finer grind. Keep the dose and yield the same so you can taste the difference.
