Machine learning can use sales history, weather, and holidays to forecast demand by product and store. A 2024 bakery case study reported an average 30% reduction in returns of unsold baked goods in its 2022 service data. The historical comparison had limitations, including factors that changed between years, so that figure is a case result rather than a forecast for every bakery. The practical opportunity is to plan production around demand. Track both leftovers and sellouts: less waste is useful only if guests can still buy what they came for.
Make the regular order easier
Order-ahead tools and loyalty programs can support a familiar routine: a usual coffee, a favorite pastry, and a pickup that fits the commute. National Restaurant Association research identifies quality, convenience, speed, loyalty, and technology-enabled ordering as parts of the value customers seek. Off-Premises Restaurant Trends, 2025.
Start with one useful experience, such as an easy-to-reorder coffee-and-pastry combination. Measure repeat orders and pickup times before adding more features.
Put product knowledge within reach
AI assistants can help staff find approved recipes and preparation guidance during a shift. In June 2025, Starbucks announced a 35-store pilot of Green Dot Assist, which let baristas ask questions on store iPads, including questions about seasonal drink ingredients. Starbucks, 2025.
An independent shop can apply the same principle with a searchable, maintained recipe library. Keep answers grounded in your own approved information, and give staff a clear way to check uncertain answers. The customer-facing benefit to aim for is confident, consistent service.
Give the cup a story of its own
Alongside improvements to service, consider the coffee you serve. Origin, roast, and brewing all shape its character. Preparation after roasting is another choice an owner can explain.

Six higher taste ratings. A reason to try it.
A 100-adult comparison reported in patent application WO2024181850A1 found higher mean liking scores in all six measured attributes when silverskin separation operated, compared with separation disabled. On a 1–10 scale:
- Aftertaste: 8.2 versus 6.2. A 2.0-point gain.
- Clean cup: 8.3 versus 6.3. A 2.0-point gain.
- Sweetness: 7.9 versus 6.1. A 1.8-point gain in sweetness liking.
A separate 100-person evaluation in the same application reported a 9.1/10 purchasing-decision rating, compared with 7.9, 6.9, and 8.1 for three commercial coffees. That measures a stated rating, not actual purchases or sales growth.

- Create a signature coffee offering. Name the preparation on the menu and give staff a short explanation of what happens after roasting.

Start with a taste. Measure the business result.
Begin with one coffee and one serving occasion. Confirm the available preparation fits your brewer and workflow, including storage and how quickly you use an opened pack.
Run a tasting with coded samples, consistent water and recipes, and alternating serving order. Ask guests which they prefer and why. If you compare different coffees, treat the result as a choice between those offerings; it will not isolate the effect of chaff removal.
Then try a limited menu feature. Track coffee orders, the share of pastry orders that include coffee, repeat purchases, and gross profit after coffee and serving costs. Use your results to decide whether to expand.
